Hearty Vegetable Minestrone

This soup is full of vegetables, and makes a great winter warmer to take with you for lunch on footy day.
- 1 brown onion, diced
- 2 cloves garlic, crushed
- 3 stalks celery, chopped
- 2 large carrots, diced
- 1 each red and green capsicum, seeded and diced
- 400 g can crushed tomatoes
- 2 x 400 g cans mixed beans, drained and rinsed
- 1/2 cup green peas
- 3 cups vegetable stock
Heat a small amount of olive oil in a large saucepan. Add onion and cook, stirring, until soft. Add the garlic and cook until fragrant. Add the rest of the vegetables and cook, stirring for 4 minutes. Add the stock, salt, pepper and extra water if needed and cook for 15 minutes until the vegetables are tender. Serve hot with some fresh chopped parsley.
Wholemeal Turkey Pizza
This tasty pizza not only tastes great, but it's healthy too! Because it's so quick and easy to make, you can whip one up in no time. It travels well, and still tastes brilliant cold!
- 1 tablespoon tomato paste
- 100g sliced turkey breast
- 1/2 seeded and sliced red capsicum
- 1 chopped tomato
- Handful sliced mushrooms
- 20 g low-fat shredded cheese
- 1 wholemeal pita bread
Preheat oven to 200℃. Place the pita bread onto a baking tray lined with baking paper. Spread with tomato paste, and top with the turkey, capsicum, tomato and mushrooms. Sprinkle over the cheese, and some oregano. Bake for 10 minutes until hot and golden. For a gluten-free version, use a soft corn tortilla base and gluten-free ingredients.
